{2012} 034. 油~欲罷不能~芥花子油 Canola Oil



再說油,真是欲罷不能!有blog友說粟米油和芥花子油更健康,於是我又上網搜尋有關的資料。因為在香港居住的幾十年中,我一直都只是用花生油;不用粟米油是因為有些家人不喜歡;沒有用芥花子油,卻是不知原因,總之多年來從來沒考慮過使用;間中會買橄欖油,但最終還是用回花生油。

又有blog友說,既然椰子油那麼有益,伯利茲人應該很健康的,可是在我所拍的照片中,總是見到一個個像穿上了兩三條車軚在身上的米芝連〝巨人〞!哈哈!這個是真的與飲食有關的!不如到超市及雜貨店一逛,一齊來看看本地油的售價,也許會明白其中一些原因。



上圖是最便宜的植物油,瓶上招紙上只寫植物油,成份表有時有芥花子油,有時是大豆油,B$2.99(約1.5美元)=500ml。下面左邊的是入口椰子油(不是初榨油),1000ml=B$12.45(約6.2美元),本地初榨油約6美元。



很多西班牙語人都會用最便宜的來自鄰國的〝植物油〞,那上Refine的甚或是Recycle的油。而這裡的人有些是袋中有多少錢就花多少的,所以一般都是買一小瓶用完再買,所以抵食夾大件的就最受歡迎啦!而食肆及售賣食物的攤檔,十居其九也是會選用最便宜那種油的。




這種是以前我們一直用開的,純植物油(100%大豆油),後來發現有下面這種同一公司的出品,同樣是純植物油(大豆油),價錢卻比上面那種貴4至5元。究竟有何不同?





原來大家都是來自同一油廠,但深黃色膠瓶的是專為百利茲市場出售而包裝的。下面的是美國當地出售的包裝。當然油中成份也有點不同,否則怎能賣不同的價錢。





再看,這裡也有花生油。但我在香港時從未見過不是金黃色的花生油!



我自少看到的那些花生油廣告中的油都是金黃、晶瑩剔透,沒想到花生油可以如此幾乎無色透明!只有七百多竟升價值約5美元!疑問又來了,為何香港的花生油都那麼金黃呢? 但這麼清晰透明又有沒有加功漂白過呢?



其他的有橄欖油,5公升膠樽初榨油約23美元。







金屬罐裝3公升橄欖油,售價差不多,約是21 ~ 25美元。





250毫升 約3.5美元,500毫升約6.4美元。加了白松露油的橄欖油(下圖),250毫升約32.8美元。

雖然油的價錢是人們使用的原因之一,可是油的品質才是直接影響人們健康的原因!那些最便宜的植物油究竟是甚麼油?才是令人憂慮的重點!………

Canola Oil來自什麼植物呢?如果去查字典,會發現根本沒有這個字,但是在市場上,Canola oil多半被翻譯成芥花油,
 
事實上,這個字是一個複合字,來自CanadaOil的組合,因為這種油產自於加拿大。它並非來自自然植物,而是在加拿大,產自於
 
rapeseed植物進行基因工程改造的一種油脂。

植物是芥花 (mustard plant)家族的一支,所以廠商很技巧的將之翻譯為芥花油,但是他和真正的芥花油 (mustard oil) 卻孑然不同。

The Dangers Of Using Canola Oil 

Recently I bought cooking oil that's new to our Health Food Stores and Supermarkets, Canola Oil. I tried it because the label assured me it was lowest in "bad" fats.  However, when I had used half the bottle, I concluded that the label told me surprisingly little else and I started to wonder: Where does canola oil come from?

Coconut oil comes from coconuts, olive oil comes from olives, peanut oil from peanuts, sunflower oil from sunflowers; but what is a canola? There was nothing on the label to enlighten me, which I thought odd. So, I did some investigating on the Internet. There are plenty of official Canola sites lauding this new "wonder" oil with all its low-fat health benefits. It takes a little longer to find sites that tell the less palatable details. Here are just a few facts everyone should know before buying anything containing canola.

Canola is not the name of a natural plant but a made-up word, from the words " Canada " and "oil". Canola is a genetically engineered plant (GMO) developed in Canada from the Rapeseed Plant, which is part of the mustard family of plants.

According to Agri-Alternatives, The Online Innovation, and Technology Magazine for Farmers, "By nature, these rapeseed oils, which have long been used to produce oils for industrial purposes, are... toxic to humans and other animals". (This, by the way, is one of the websites singing the praises of the new canola industry.)

Rapeseed oil is poisonous to living things and is an excellent insect repellent. I have been using it (in very diluted form, as per instructions) to kill the aphids on my roses for the last two years. 
It works very well; it suffocates them. Ask for it at your nursery. Rape is an oil that is used as a lubricant, fuel, soap and synthetic rubber base and as a illuminate for color pages in magazines. It is an industrial oil. It is not a food. Rape oil, it seems, causes emphysema, respiratory distress, anemia, constipation, irritability, and blindness in animals and humans. Rape oil was widely used in animal feeds in England and Europe between 1986 and 1991, when it was thrown out.

Remember the "Mad Cow disease" scare, when millions of cattle in the UK were slaughtered in case of infecting humans? Cattle were being fed on a mixture containing material from dead sheep, and sheep suffer from a disease called "scrapie". . It was thought this was how "Mad Cow" began and started to infiltrate the human chain. What is interesting is that when rape oil was removed from animal feed, 'scrapie' disappeared. We also haven't seen any further reports of "Mad Cow" since rape oil was removed from the feed. Perhaps not scientifically proven, but interesting all the same.

US and Canadian farmers grow genetically engineered rapeseed and manufacturers use its oil (canola) in thousands of processed foods. The canola supporting websites say that canola is safe to use. They admit it was developed from the rapeseed, but insist that through genetic engineering
it is no longer  rapeseed, but "canola" instead. Except canola means "Canadian oil"; and the plant is still a rape plant, albeit genetically modified.
The new name provides perfect cover for commercial interests wanting to make millions. Look at the ingredients list on labels. Apparently peanut oil is being replaced with rape oil in peanut butter.

You'll find it in an alarming number of processed foods. There's more, but to conclude: rape oil was the source of the chemical warfare agent mustard  gas, which was banned after blistering the lungs and skins of hundred of thousands of soldiers and civilians during W.W.I.  Recent French reports indicate that it was again in use during the Gulf War.  Check products for ingredients.  If the label says, "may contain the following" and lists canola oil, you know it contains canola oil because it is the cheapest oil and the Canadian government subsidizes it to industries involved in food processing.

I don't know what you'll be cooking with tonight, but I'll be using olive oil or the very healthy alternative Coconut oil.
Here is more information.......... Canola oil from the rape seed, referred to as the Canadian oil because Canada is mainly responsible for it being marketed in the USA .  Studies with lab animals were disastrous.  Rats developed fatty degeneration of heart, kidney, adrenals, and thyroid gland. When canola oil was withdrawn from their diets, the deposits dissolved but scar tissue remained on all vital organs.  No studies on humans were made before money was spent to promote Canola oil in the USA .  Adrenoleukodystrophy (ALD) is a rare fatal degenerative disease caused by a build up long-chain fatty acids (c22 to c28) which destroys the myelin (protective sheath) of the nerves.  Canola oil is very long chain fatty acid oil (c22).  Those who will defend canola oil say that the Chinese and Indians have used it for centuries with no effect; however it was in an unrefined form. My cholesterol level was 150.  After a year using Canola oil I tested 260.  I switched back to pure coconut oil and it has taken 5 years to get it down to 160.  Thus began this project to find answers since most Doctors will say that Canola oil is O.K.  My sister spilled Canola oil on a piece of fabric, after 5 pre-treatings and harsh washings, the oil spot still showed.  She stopped using Canola oil, wondering what it did to our insides if it could not be removed from cloth easily.

Our father bred birds, always checking labels to insure there was no rapeseed in their food.  He said, "The birds will eat it, but they do not live very long."

A friend, who worked for only 9 months as a quality control taster at an apple-chip factory where Canola oil was used exclusively for frying, developed numerous health problems.  These included loose teeth & gum disease; numb hands and feet; swollen arms and legs upon rising in the morning; extreme joint pain especially in hands, cloudy vision, constipation with stools like black marbles, hearing loss; skin tears from being bumped; lack of energy; hair loss and heart pains.  It has been five years since she has worked there and still has some joint pain, gum disease, and numbness.  A  fellow worker, about 30 years old, who ate very little product, had a routine check up and found that his blood vessels were like those of an 80 year old man.

Rape seed oil is a penetrating oil, to be used in light industry, not for human consumption.  It contains a toxic substance. Canola oil is a health hazard to use as a cooking oil or salad oil.  It is not the healthy oil we thought it was.  It is not fit for human consumption, do not eat canola oil, it can hurt you.  Polyunsaturated or not, this is a bad oil.  Be sure to also read this informative report written by leading health expert Tom Valentine, Canola Oil Report.

Canola Oil 芥花子油的迷思與真相  琉璃光雜誌/俞靜靜
 大約是十幾年前,市面上突然出現了一種新的烹飪油,英文叫做Canola Oil。起先只有在專賣「健康自然產品」的店裡才能看到,但是因為政府及私人公司都廣為宣傳這種油的好處:純植物提煉、不飽和性脂肪、低膽固醇、比別的植物油還理想云云。既然連政府都這麼說,大概是不會錯了;於是乎關心自己和家人健康的朋友,都紛紛買回去做菜。它在北美洲的銷路直線上升,沒多久也引進了台灣。
 但是,Canola油到底是什麼東西做的呢?其他的油都可以從名字望文生義:如橄欖油,當然是橄欖的油;花生油是花生仁的油;椰子油是椰子果實的油等等。筆者心生疑惑,查了極詳備的東華大辭典,竟然沒有這個字。
 去年某日,筆者重聽雷博士在四、五年前演講的錄音帶,赫然得到了答案。正巧又有一位琉璃光的朋友轉來一篇網上有關此油的文章,恰印證了雷博士所言。筆者知道有不少朋友還在用這種油,當即轉發此文給一些能看英文的朋友。數天之後,有一位本地朋友很急切的告訴我說:「好可怕啊!我們家這幾年都用Canola油,那篇文章裡講的症狀我們一家四口全有!我已經馬上換掉了!」
英文Canola一字,從「Canada Oil Low Acid」四個字的首字母組合而成,意為「低酸加拿大油」。Canola的前身是一種叫作蕓苔(Rape)的植物,原生地是歐洲,俗稱歐洲油菜,屬十字花科(Mustard Family)。
 一九七年代,加拿大的科學家把蕓苔作了基因改造,去掉裡面的糖(Glycosides,會干擾甲狀腺功能),並減少其中所含的芥子酸(Erucic Acid,有毒),改良出了第一代的「低芥子酸蕓苔子」(Low Erucic Acid Rapeseed,簡稱LEAR)。但荷蘭有研究顯示這種油會傷害心臟。這項基因改造工程持續未斷,所以也一直未有官方的長期追蹤研究報告,但是由於這個新品種油菜容易種,長得快,蟲害少(蟲子退避三舍),收成多,很快就變成了加拿大的主要經濟作物。加拿大人說這種基因改造的菜籽油有「二低一高」的優點──芥子酸低、糖低、好的油酸(Oleic Acid)高,又是不飽和脂肪,真是太理想的「健康」油了,不但鼓勵自己人民吃,也不忘推銷到好鄰居美國去。一九七九年,加拿大的食用油工業決定為它改名為「Canola」,正式擺脫了「有毒蕓苔」的陰影,並凸顯加拿大之光。
 加拿大人付了美國食品藥物管理局(FDA)五千萬美元,把Canola登記為合法,並認證為「安全」。於是美國農民也紛紛買種子回去種。這樣一種經過基因變造的主要食用作物,美加政府未要求先作人體試驗,就允許其在市場上大賣,吃進老百姓的肚子。當然,這也不是頭一椿了。加拿大曾用此油作動物實驗,結果是這樣子的:
 老鼠的心、腎、腎上腺及甲狀腺中的脂肪產生變性和退化;而飼料中不加Canola油之後,老鼠體內這些累積的脂肪殘渣就慢慢溶解,但是在那些主要器官上留下傷痕。
 這是由於長鍊脂肪酸(C22C28)不能為生物體吸收,累積在體內形成瘀塞,不但引發心血管問題,並且會破壞神經髓鞘(Myelin)。神經沒有了這個保護層,就如同家中的電線外皮剝落,是很危險的事,而Canola油正是一種長鍊脂肪酸(C22)。Canola油會破壞神經系統,想來是不無道理,因為在二次大戰中所使用的神經毒氣芥子氣,就是以蕓苔為原料。在令數千軍民的皮膚及肺起泡以後,早已禁用了。
 據油脂專家所作的研究及觀察,食用CANOLA油的人出現了以下症狀
1. 視力模糊/失明
2. 聽力減退
3. 排尿不順/困難
4. 呼吸急促/氣短
5. 心臟病/心律不整
6. 罹癌率增加
7. 便秘
8. 失眠
9. 小兒啼哭不止/嬰兒出生體重不足
10. 無名的疲憊
11. 干擾破壞神經系統,其產生的症狀計有
 a. 發抖、顫動、麻痺
 b. 走路、寫字等動作不能協調
 c. 口齒不清
 d. 口水過多
 e. 記憶及思考退化
 f. 難以適應環境/過敏──如食物、氣味、衣物、電器、氣候冷熱變化
 g. 神經崩潰
 h. 手腳末梢麻木刺痛
 i. 多重硬化症

 一九八六至一九九一年間,歐洲大量把蕓苔菜籽加在牲畜飼料裡面,結果動物的眼睛失明,而且會攻擊人。也就是在這段期間,發生了狂牛症(Mad Cow Disease)及羊癢病(Scrapie)。而歐洲自一九九一年始全面禁用蕓苔菜籽後,羊癢病就不復見,牛羊豬眼瞎、攻擊人的情況也沒有了。這是巧合嗎?
 儘管蕓苔已搖身一變而為Canola,但是它其中的毒性仍未全消,它作為工業用潤滑油的滲透性也還在。有人作過簡單的實驗:把Canola油沾一些在布料上,用洗衣粉、清潔劑洗了三次,不但洗不掉痕漬,油漬上仍舊有油臭味。滲透力這麼強的油,到了人體裡面,會產生什麼效應呢?不僅如此,Canola油會形成乳膠狀的物質,使紅血球凝結成團。
 一九九七年,加拿大有一個很出名的研究,給實驗小豬的飼料裡摻了Canola,結果發現其體內的維他命E值降到極低,已近危險程度。至於另一組吃黃豆油飼料的小豬,其維他命E值並未下降。因此證明Canola油會破壞體內的維他命E。次年這一研究小組又發表新的實驗結果,證實Canola油也會減少小豬體內的血小板數量,並且血小板的體積也變小了。
 但是,你若去網上查有關Canola油的資料,仍會發現說它好的資料多。美加的專家學者說,這些對人體的效應,在食用Canola油十年以後才會出現,所以不必太擔心(真的不用擔心嗎?)
                                                                     
上述僅是Canola油本身獨具的特性;除此之外,它也不免經過了一般植物油的提煉過程,才能從菜籽變成一瓶清清如水的食用油。這個過程大略是這樣子的:
 首先用己烷(Hexane溶劑及別的化學劑將油從菜籽裡分離出來,再以華氏三百度的高溫提煉,去掉蕓苔子油天生的怪味。任何油經過這種高溫都會變質,其中的Omega-3成分因此腐壞,而產生臭味。下一步是把腐敗的Omega-3的臭味去掉,將其氫化以保持其穩定,不易「變壞」。到了這個程度,油中好的成分已破壞怠盡,只剩餘對一些人體有害的物質。所以Canola油是氫化油,其中所含的反式脂肪(Trans-fat)可能高達百分之四十。有關氫化油及反式脂肪會對人體造成什麼影響,在陳俊旭博士所著的「吃錯了,當然會生病」一書中講解得非常清楚。
 而今,Canola油已無所不在,即使你不買來燒菜,它也已經在洋芋片中、在花生醬中、在餅乾中、在餐館食物中。如果您想避免它,那麼在選購食品時,要先看一看成份標示。有時候表上並未明列含有Canola油(或菜籽油),但是最後加了一句「以及其他油。」那麼很可能就是Canola油了,因為它最便宜。
 現代飲食確是危機四伏,有政府背書的也不能全信,所幸,我們還可以用自己的知識、直覺與智慧來判斷。尚有好些健康的油可供選擇,如椰子油、橄欖油、葡萄籽油、紅花油(Safflower Oil)等等,但是都須冷壓榨取的才可以。其中,又以椰子油是天然的飽和性植物脂肪,所含是中鍊脂肪酸,對人體最為適宜。至於飽和脂肪及不飽和脂肪究竟誰是誰非,這又是一個誤導和迷思,有智慧的讀者們多收集一些資料,多思維之後,便不難明了其中答案。在此且引申加拿大一位環保人士托比.麥隆尼(Toby Maloney)的話作結尾:
 要改變一般大眾信以為真的事,真是不太容易。Canola油這整件事就是操控的結果──操控種子、操控農作、操控食品加工、操控期貨市場。(按:還要加上「操控大眾傳播」)而因何得以如此矇蔽大眾呢?根源就在於大多數現代人已不再親自參與食物的生產了。這才是最不健康的事。

    [版主回覆05/08/2012 11:22:16]澳洲本土都生產Canola Oil?不過真係唔好用!唔知點解我無用Canola Oil,但用那Refine Soy Bean Oil 手腳關節痛的症狀就出現了兩年多,那時候我真係成日沒厘神氣,腰酸背痛,早上醒來手指關節屈伸也痛,成日同標講我no energy(無力)!佢話我都無野做,淨係睇(玩)電腦,點解會倦會無氣無力?我就是不知何解!而家轉用椰子油,痛症消失了八成!真係行步路都快左!人也精神左!

  8. 我有時都會買芥花子油來用架,怪不得我都是有時會有關節痛的情況,我都係以為係風濕咋,原來唔係呀!以後唔用喇!不過這裡很難買椰子油,有也很貴!用回花生油會好些嗎?

    仲有,如果買欖油貴少少都要買初榨那種喎!仲要係100%欖油,不要買〝欖油加植物油〞那種混合油,因為混入的就是Refine 的植物油,那些植物油有可能是大豆油亦有可能是芥花子油,但卻因為有欖油之名售貴了!小心!

  10. 記的有一年到菲律賓旅行,他們的麥當勞是用椰油炸薯條的.

  11. 椰油是最難消化及膽固醇最高的油!芥花子油是用科學技術提練的,我吃傳統的花生油!
    [版主回覆05/16/2012 05:52:09]膽固醇都有分好壞,但椰子油好似無膽固醇喎!其實除左芥花子油,大豆油都有係用科學技術提練的,即使橄欖油也有些是用科技提練的,如果我仍在香港,我也會沿用花生油,不過現在這裡沒有花生油,所以用椰子油。

  12. 看了你的這篇上半段,因為有事沒時間看完,下次再來看.

    但我也 google 了一下 Canola Oil,在 Wikipedia的資料顯示, Canola Oil沒有這些引說的可怕 (要一直看到最下面完結為止). 芥花子油是從芥花子提取而成的,因為原本的油有對人體有害的物質erucic acid,原生芥花子油所含的erucic acid起初成份重,連動物也不適食用,甚至引致心臟損害, 亦有印度學者否決這樣的說法.但最終, 芥花子還是進行了基因改造而使它的成份達人類安全食用.因含較少的膽固醇及飽和脂肪,所以被美國醫學界及 FDA 認為是比較健康及減少心藏病的食油.

    說芥花子油可致癌,但並沒有可靠根據.再細讀資料,這油的出處因為基因改造而產生了不少農業上的法律爭議. 它的基因改造背景也可能讓反對食物基因改造的人士想在此找滓 (但今社會,我們吃的大部份食物已經基因改造),所以貴文中所引用的資料,雖然我還沒看完,但是心裡對它們暫時有存疑.

    但我同意你說,吃油最好選用純正的. 食油一般顏色越淺越新鮮(除油本身帶來的植物顏色).

    [版主回覆05/23/2012 11:47:13]多謝米俐!我生日那天也有去吃麵啊 ~ 台灣牛肉麵!俗語說靠山吃山,東南亞出產椰子,所以當地人都多會用椰子製各式食品,伯利茲也有很多椰子,以前也有很多人用椰子油,後來因為入口油便宜,更重要是比椰子油更便宜!很多人都買那些便宜油,不再用椰子油了。
